This cookbook contains a wide variety of muffins, loaves, biscuits, even French Toast "Waffles".
There are 8 variations for the "good for you" Bran Muffins.
As well as, 7 variations for the ever popular Banana Bread.
Try a different recipe each time you bake!
Sample Recipe: BANANA MUFFINS (page 7)
In a large bowl, combine:
1 cup graham wafer crumbs
3/4 cup all-purpose flour
1/2 cup lightly packed brown sugar
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
Stir together to evenly distribute ingredients.
In a small bowl:
Beat 1 egg
Add 1/2 cup oil
Add 3/4 cup mashed very ripe bananas
Combine well together. Add to dry ingredients all at once. Stir just enough to moisten dry ingredients.
Spoon into greased muffin tins, filling 2/3 full.
Bake at 400 degrees F for 15 - 18 minutes.
Makes 12 medium muffins.

Sample Recipe: POTATOE WEDGES (Page 32)
1/4 cup butter or margarine, melted
1/4 cup ketchup
1 tsp. prepared mustard
1/2 tsp. paprika
1/4 tsp. salt
3 large potatoes, unpeeled
Preheat oven to 425 degrees F.
In a small saucepan, over low heat, melt butter; remove from heat. Stir in ketchup, mustard, paprika and salt until well mixed.
Cut each potato into 4 wedges; slash each wedge crosswise at 1/4 inch intervals, but not through skin.
Place potatoes skin-side down, on baking sheet. Brush potatoes with 1/3 of butter mixture.
Bake 35 minutes, or until potatoes are fork tender. Brush potatoes occasionally with remaining butter mixture during baking.
Makes 4 servings
